Ingredients

Cucumber 1 cup grated
Yogurt 2 cups fresh
Cumin powder 1 tsp.
Red chilli powder 3/4 tsp.
Black pepper powder 1 tsp.
Salt to taste
Coriander Leaves chopped finely 1 tbsp.
Mint Leaves chopped finely 1/2 tbsp

Vegetable Raita

Ingredients

Plain Yogurt 1 cup
Cucumber grated 1
Carrot grated 1
Green chilli 1
Tomato 1
Onion 1
Coriander Leaves
Mint Leaves

Salt to taste
Black Pepper powder 1 tsp.
Cumin powder 1tsp.

Directions

Beat Yogurt well

Finely chop green chilli, tomato, onion and coriander leaves and add it to the yogurt

Add in rest of the ingredients mix well and serve cold

Green Apple Chutney

Ingredients

Green apples - 2
Mustard powder and methi powder - 1/4 tsp.
Chilli powder - 2 tsp.
Garlic - 3 cloves (cut into small pieces)
Turmeric powder - a pinch
salt - as desired
Red chillies
Oil

Directions

Wash green apple and grate it along with skin.

In a pan add oil. To this add the red chilies

Pepper Chutney

Ingredients

Bell peppers 5-6 large firm
Cumin seeds 1/2tsp.
Mustard seeds, crushed coarsely 1 tsp.
Dry red chillies, 15-17 deseeded
Garlic cloves 8-10 f
Soft brown sugar 1 tbsp.
Brown vinegar 2 tbsp.
Salt to taste
Oil 3 tbsp.

Directions

De seed and chop bell peppers into roughly one inch square pieces.

Grind all ingredients into a paste, except peppers, oil and salt. Keep aside.

Sweet Tomato Chutnee

Ingredients

Tomatoes 4 medium
Dry red chilli 1 small
Mustard seeds
Turmeric powder 1/4 tsp.
Bay leaves 2
Dates 4-5 pieces seedless
Raisins (kishmish) 8-10
Sugar 4-5 tsp.

Directions

Cut tomatoes into small pieces.

Heat little oil in a pan. Add red chilli.

When the chiili turns blackish, add mustard seeds.

After the mustard seeds splutter, add tomatoes.

Immediately add turmeric powder, very little salt and bay leaves.

Tamarind Chutney

Ingredients

Tamarind 1 cup cleaned
Sugar 1/4 cup
Water 2 cups
Dried Red chilli 3 - 4 Balls
Cumin seeds I Tbs.
Salt 1 tsp.

Directions

Wash the tamarind clean.

Place the tamarind and water in a deep boiling pan.

Soak for a few minutes.

Put to boil for about 10 minutes.

Mint and Coriander Chutney

Ingredients

Coriander leaves 1 bunch
Mint leaves 1 bunch
Green chili 1
Dried Red Chilli 3-4 Balls
Salt 1 tsp.
Water 4 Tbs.

Directions

Clean, pick and wash the coriander and mint.

Grind coriander, mint, green chili, dried red chilli and salt into a fine paste.

Serve with snacks
